Muddy Cow restaurant stampedes into Cottage Grove this fall

COTTAGE GROVE — Goodbye Ruby Tuesday, hello Muddy Cow.

The former Ruby Tuesday building will get a second life late this fall when the Coon Rapids-based Muddy Cow opens the latest of its six restaurants.

The Muddy Cow currently has restaurants open in Coon Rapids, Lichfield and Shakopee, and are soon opening more in Oak Park Heights and New Richmond, Wis. The Cottage Grove location will open around Halloween or Thanksgiving, Muddy Cow co-owner Patrick Conroy said.

"That's the one location that I'm most excited about," he said.

The first Muddy Cow opened about three years ago, and the franchise is set to have twice that many restaurants open by the end of the year.

Conroy and his business partner decided to jump into Cottage Grove after connecting with the Ruby Tuesday landlord and discovering the building. He said he anticipates it to be a great location for the restaurant, with not many others currently in the city.

The family-friendly sports bar serves a variety of standard grill fare, as well as daily specials such as ribs and fish tacos. Conroy said the restaurant specializes in deals such as the all-day 2-for-1 and a $5 burger, something that "sets us apart from everyone."

The Ruby Tuesday building has been vacant since the chain abruptly closed the Cottage Grove location, at 7350 Hardwood Court, in August 2016.

Conroy said the building will undergo an extensive remodel in the coming months, moving the bar and "basically everything" floor to ceiling will be new, he said. There will also be games for kids inside the renovated restaurant.
