Junction 70 plans May opening in Cottage Grove
The much-anticipated Junction 70 Grill will open this May.
Business partners Joel Lehman, Dave Voss and Jason Fleig broke ground on the restaurant at Hinton Avenue and 70th Street back in November, and the building has been rising steadily throughout the winter. They're aiming for a May 1 opening.
Lehman said the bulk of the exterior work is complete, with the exception of parking lot paving, patio work, lighting and Junction 70 signage.
Workers are quickly transforming the interior into a restaurant, sanding the sheetrock walls and tiling the floors. Lehman said he's excited about the hoods going up in the kitchen — not surprising coming from a restaurateur.
"We're just trying to get it open as soon as possible," he said. "It's surprising to see how quickly they're going."
Lehman, Voss and Fleig continue to cement the menu.
At the May opening, the menu will be a bit thin, but it will be beefed up later on.
"We will be updating as time goes on," Lehman said. "We'll be fairly busy to start off with, so we want to be able to get food and drinks out quickly."
The restaurant website, junction70grill.com, teases steak, burgers, barbecue, pizza and seafood, alongside a bar stocked with 36 varying taps. They will serve lunch, dinner and Sunday breakfast.
Junction will also boast a game room and 11 TVs to create the sports bar atmosphere; one of the screens is a massive 14-footer.
Lehman has some experience managing a restaurant, already owning the Lone Oak Grill in Eagan. He said Junction 70 Grill will be a bit smaller than Lone Oak and more family-oriented.
